Oleo Saccharum
Oleo saccharum is an extremely versatile and easy to make sugar syrup infused with citrus oil. It can be used in place of simple syrup to give an extra punch of flavor without adding additional acid or water from citrus juice. Perfect for both cocktails and non-alcoholic drinks.
Recipe:
1 part citrus zest
1 part demerara sugar
Combine equal parts by weight citrus zest and demerara sugar in a large non-reactive bowl and cover. Allow to sit at room temperature for 24-48 hours stirring occasionally. Add a splash of hot water to dissolve any remaining sugar and strain into a container for storage. Store in the refrigerator.
